Cary Prewitt is a hospitality founder and concept creator focused on building cultural destinations across the American Southwest — venues designed to function as more than businesses.
Over nearly two decades as an entrepreneur, Cary has founded craft beverage brands, restaurants, and entertainment concepts across Texas, Idaho, and Arizona. His work spans brand architecture, concept development, and the operational strategy required to bring layered, immersive hospitality experiences to life.
Today he is Co-Founder of Saguaro Nights Entertainment Group, a Phoenix-based hospitality collective developing a portfolio of multi-room nightlife and entertainment destinations. The group's first marquee project, Pablo's, transforms a 1952 Spanish-style building at McKinley & First into a sequence of distinct, narrative-driven environments — three bars, a central courtyard, a front patio, and Night Tiger, the venue's late-night nightclub. The cocktail program is being developed in partnership with Barter & Shake Creative Hospitality (Century Grand, Platform 18, Undertow), with design led by Crater, the hospitality division of Mexico City-based Arkham Projects.
Cary's approach is shaped by years of building, learning, and refining. The thesis is simple: hospitality should feel like discovery — rooms that surprise you, spaces that pull you in, experiences that make you want to stay longer than you planned.
